Eggs, Fish Sauce and Sri Rachaa (kai jiow)
Original recipe from "Quick and Easy Thai" by Nancie McDermott.
4 eggs
1 tablespoon fish sauce
1 tablespoon water
2 tablespoons vegetable oil
Combine eggs, fish sauce and water. Wisk with a fork to blend. Heat the oil over medium-high heat. Add eggs and pull eggs pack to let uncooked eggs flow to the middle. When almost set, flip and cook for an additional minute. Serve with hot sauce of your choice for dipping.
What I did: Two eggs, 1.5 tsps fish sauce, 1.5 tsp water. Mix together in microwave safe bowl. Microwave for about 1 minute. Stir and microwave about 45 seconds. Chop the egg mass with a fork, put on a plate and drip on some hot sauce and enjoy.
